The cuda-version of PTStitcherNg performs all remapping and blending operations in gpu-ram. More ram allows you to work on larger projects. So far I never ran out of gpu-ram on my GTX 285 (1 GByte), even when stitching a 3-GByte panorama, because only parts of the file need to be in memory.

You can also use cpu-ram instead of gpu-ram, with some speed penalty.

I cannot answer this question, because it depends on your projects, and I do not have a good knowledge of all hardware options and prices. I am planning to set up some testprojects with user supplied timing results, but this may take some time.
