It would be difficult to maintain a comprehensive, up-to-date tutorial
because the tools we use - both software and hardware - are varied and
different. There's no magic app that does it all for us - and the disparate
apps we do use are changing all the time. I doubt that very many of us
accomplish things exactly the same way.
Regarding the zenith & nadir - if you're using a panohead that has both
horizontal and vertical rotation, your zenith can be worked into a
semi-automated process. The Nadir is another beast entirely - it usually
requires a fair amount of manual editing.
Erik Krause's tutorial is quite helpful for stitching nadirs in PTGui:
