It depends on your use. With the 8mm you can shoot from a monopod with 
4 images or also freehand with a bit of experience, with the 10.5 you 
need at least 6 pics + 1 up and down, but you will get a better image 
quality.

Giving the state-of-the-art of DSLR's, the D200 seems to be a good 
camera for the price. And you can always mount a 8mm fisheye on the 
Nikon. So if you go to buy your first camera system, the Nikon D200 is 
ok. The 10.5 for the smaller sensor is only manufactured by Nikon, 
Canon has no similar lens.
