I can just speak for normal lenses, but a few Millimeters plus/minus should
not be a problem. Maybe fisheye lenses are more sensible against that?!
But it's mostly depending on what kind of motiv you are having. 

The theoretical parallaxe you will have using a badly adjusted cam will
shrink while the distance to objects grows and it will grow while the
distance between objects grows.

Try shooting a graffity wall or something ~ 2-dimensional - that will be
tolerant against bad camera adjustment. If you still have problems - it seems
to be your stitching ;-)
