The image circle on the 8mm won't cover much of the sensor on the 5D,  
and you would be using a lot of the worst quality part of the images.

Don't lose hope, though - Using a 'shaved' Nikon 10.5mm fisheye you  
can do full spheres with 3-4 shots, with much better image quality  
than the Sigma. By 'shaved' I mean that the lens hood has been cut  
off as it was designed for crop cameras.
