Hi Peter and Robert
Mostly I do 2-3 raw bracket shots at 1-2 ev. steps with the brightest one a
little overexposed and blend them with DRI by Fred Miranda
http://www.fredmiranda.com/DRI/ a plugin for PS. Sometimes I also add DEE to
the indivdual shots in Nikon Capture prior to the blending.
For exstreme cases [like most daytime winter shots here at the nothern
hemispere] I do ekstra shots for the exterior [w/ own whitebalance] and
blend them in manually.
To do this I make a layer "sandwich" of two copies of the "normal" DRI with
the exterior in between
Then mask the "windows" in the top layer with a soft brush to reveal the
middle exterior layer.
If the difference is too big I turn down the opacity of the middle layer.
To help making the mask I somtimes load the brightest shot on top as it
often shows the "windows" as pure white [blow out]
All this is done before stitching.
It may sound as much work and it would off course be much easier if you
could achieve the same results without the bracket shots; but the DRI part
is rather automated and if you take care when setting up for shooting you
might only have to do the manual insert in one direction. And if you
calculate it all in your workflow and take your pay for it I think it's
worth it.
Other methods for optimizing the whitebalance/dynamic range can be found
here:

to see some of my samples look here:

Actually on some of these I also used extra shots set for the deep interior.
and here is an old link to an interesting idea on how to build a sperical
flash:
